Step-by-Step Instructions
1. Soften the Chilies
Put the guajillo chiles, ancho chiles, onion, and garlic in a saucepan. Add 5 cups of water and bring it to a simmer. Cook for about 20 minutes, until the chilies are soft and flexible. When they’re done, take the pan off the heat and drain the water.
2. Blend to Perfection
Move the softened chilies, onion, and garlic to a blender. Add the pineapple juice, vinegar, achiote paste, Mexican oregano, black pepper, cumin, chicken bouillon, whole cloves, and salt. Blend everything on high until the sauce is smooth and creamy.
