Easy Fresh Pineapple Salsa

Nothing says summer like a delicious, fresh pineapple salsa. You get the sweetness with a hint of spice. This salsa is easy to make, and it’s the perfect appetizer or side dish for your summer BBQs. This fresh salsa also pairs beautifully with fish tacos.

How to make this recipe

Cut your pineapple. Cut 1/3 of the pineapple off to make pineapple bowl.

Make your pineapple boat. Make a cut around the outer edge of the pineapple fruit. Then, make square cuts through the center and using a metal spoon, loosen and scoop out the pineapple chunks.

Dice your pineapple and vegetables. Dice pineapple, bell peppers, red onion, tomatoes and jalapeños. Chop cilantro.

Mix all ingredients together. In a bowl, add diced pineapple, diced bell peppers, minced onions, diced tomatoes, diced jalapeños and chopped cilantro. Squeeze the juice of a lime. Add salt and black pepper to taste.

Add your pineapple salsa to boat and serve. Chill before serving. Enjoy with tortilla chips!

  • 1 Whole Pineapple (for boat and 1 cup diced for salsa)
  • 1 cup diced red bell peppers
  • 1 cup diced tomatoes
  • cup chopped cilantro
  • ½ cup minced red onion
  • 2 diced jalapenos
  • black pepper to taste
  • salt to taste

Instructions
 

Pineapple Boat

  • Cut 1/3 of the pineapple off to make pineapple bowl.
  • Make a cut around the outer edge of the pineapple fruit.
  • Make square cuts through the center and using a metal spoon, loosen and scoop out the pineapple chunks.

Salsa

  • Dice pineapple, bell peppers, red onion, tomatoes and jalapeños. Chop cilantro.
  • In a bowl, add diced pineapple, diced bell peppers, minced onions, diced tomatoes, diced jalapeños and chopped cilantro.
  • Cut 1 lime in half and squeeze lime juice into mixing bowl.
  • Add salt and black pepper to taste and mix.
  • Pour mixed salsa into pineapple bowl and cover. Chill in refrigerator before serving. Enjoy with tortilla chips!
