Fresh Pineapple Salsa

Ingredients
  

  • 1 Whole Pineapple (for boat and 1 cup diced for salsa)
  • 1 cup diced red bell peppers
  • 1 cup diced tomatoes
  • cup chopped cilantro
  • ½ cup minced red onion
  • 2 diced jalapenos
  • black pepper to taste
  • salt to taste

Instructions
 

Pineapple Boat

  • Cut off the top 1/3 of the pineapple to create a “boat” or bowl.
  • Carefully cut around the outer edge of the pineapple fruit, leaving about an inch of flesh attached to the skin. Make a cut around the outer edge of the pineapple fruit.
  • Make horizontal and vertical cuts through the center of the pineapple, creating squares.
  • Using a metal spoon, gently loosen and scoop out the pineapple chunks, leaving the “boat” intact.

Salsa

  • Dice the scooped-out pineapple into small pieces, measuring about 1 cup.
  • In a large bowl, combine the diced pineapple, diced bell peppers, minced red onion, diced tomatoes, diced jalapeños, and chopped cilantro.
  • Cut one lime in half and squeeze the juice directly into the bowl.
  • Season with salt and black pepper to taste and mix well to combine all the flavors.
  • Carefully pour the mixed salsa into the prepared pineapple boat.
  • Cover the pineapple boat and chill it in the refrigerator for at least 30 minutes before serving. This allows the flavors to meld beautifully.
  • Serve with your favorite tortilla chips and enjoy the fresh taste of summer.
