Equipment

Ingredients
  

  • 2 lbs ground beef
  • 1 cup diced onions
  • 3 garlic cloves minced
  • 2 cans diced tomatoes 14.5 onces each
  • 16 oz tomato sauce
  • 4 tbsp tomato paste
  • 8 cups beef broth
  • 1 pk Goya beef seasoning
  • 3 tsp Italian seasoning
  • 12 strips lasagna noodles

Cheese Topping

  • 2 cups ricotta cheese
  • 1 cup parmesan cheese grated
  • 1 cup mozzarella cheese shredded
  • parsley flakes or fresh parsley

Instructions
 

  • In a large pot or Dutch oven, add olive oil and begin to brown the ground beef over medium-high heat. Break the meat up as it cooks.
  • Add the diced onions and minced garlic cloves. Cook over medium heat until softened (about 5-7 minutes).
  • Stir in tomato paste, italian seasoning and beef bouillon. Cook for about 1-2 minutes.
  • Stir in cans of diced tomatoes, cans of tomato sauce, and beef broth and heavy cream.
  • Break into pieces the lasagna noodles and add to pot.
  • Bring the mixture to a boil, then immediately reduce the heat to low, cover the pot, and simmer until the noodles are cooked. Stir occassionally.

Cheese Topping

  • In a bowl, combine ricotta cheese, parmesan cheese, mazzarella cheese, parsley flakes and add salt to taste. Stir until well combined.
  • Add a dallop of the cheese mixture to your bowl of lasagna soup and enjoy.
