The Secret to the Perfect Texture
The most common problem with cream cheese frosting is that it can turn out runny. To prevent this, make sure your butter and cream cheese are at room temperature, but not melted. If they’re too warm, the frosting won’t keep its shape. If they’re too cold, you might get small lumps.

- Cream Cheese: Use the full-fat brick variety (not the spreadable tub) for the best stability.

How to Make It
