If you enjoy the cozy, spiced taste of classic carrot cake but want something simpler than a big baking project, try making Carrot Cake Cookies instead.

These cookies aren’t like regular crispy biscuits. They are soft, cake-like, and pillowy, almost like little cakes you can hold in your hand. They have all the best parts of classic carrot cake, including the creamy swirl on top.

Why You’ll Love These Cookies

Most cookies rely on butter and sugar for texture, but the 2 cups of chopped carrots in this recipe add incredible moisture. Combined with a mixture of warming spices, these treats stay soft for days (if they even last that long!).

The Ingredient Breakdown

The Dry Base:

  • All-Purpose Flour: Gives the cookies their structure.
  • Baking Powder & Baking Soda: Help the cookies rise and stay light.
  • Salt: Balances out the sweetness.
  • Ground Cinnamon: Adds a warm, cozy smell.

The Creamy & Sweet:

  • Unsalted Butter: Softened to make the cookies rich and tender.
  • Granulated Sugar: Adds sweetness and a little crispness to the edges.
  • Brown Sugar: Brings a touch of molasses flavor and makes the cookies chewier.
  • Eggs: Hold the dough together.
  • Vanilla Extract: Brings out the flavor of the spices.

The Texture & Toppings:

  • Chopped Carrots: Finely chop or grate them to keep the cookies moist.
  • Cream Cheese Frosting: Adds a tangy and smooth finish.
  • Chopped Pecans: Sprinkle on top for a buttery crunch.

How to Bake Them

  1. Mix the Dry Ingredients: In another bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  2. Cream the Butter: Beat the butter with both sugars until light and fluffy. Add the eggs and vanilla, mixing until fully incorporated.
  3. Prep the Carrots: Chop your carrots. Make them small enough to blend into the batter, but still big enough to add texture.
  4. Combine: Gently fold the dry ingredients into the wet mixture, then stir in the chopped carrots.
  5. Bake: Drop rounded tablespoons of dough (or use a cookie dough scoop) onto a parchment-lined baking sheet. Bake at 375°F (190°C) for 13 to 15 minutes. The cookies should be set but still soft.
  6. Finishing Touch: When the cookies are completely cool, pipe cream cheese frosting on each one and press chopped pecans on top.
