What You’ll Need

This recipe balances a smooth, savory base with a colorful, crunchy coating.

  • 8 oz Cream cheese (softened)
  • 2 tbsp Mayonnaise
  • 1 cup Chopped bacon (divided)
  • 1 cup Shredded cheddar cheese (divided)
  • 2 Green onions, chopped (divided)
  • 2 Jalapeños, minced (divided)
  • ½ tsp Onion powder
  • ½ tsp Garlic powder
  • ½ tsp Ground black pepper

Step-by-Step Instructions

1. Cream the Base

Begin by using your stand mixer with the paddle attachment. On medium speed, beat the softened cream cheese and mayonnaise together with the onion powder, garlic powder, and black pepper. Mix until the texture is silky smooth and light.

2. Fold in the Flavor

Next, add the ingredients that give it that jalapeño popper flavor. Lower the mixer speed and add:

  • 2/3 cup of the cheddar cheese
  • 2/3 cup of the chopped bacon
  • Half of your minced jalapeños
  • Half of your chopped green onions

Put the rest of the cheese, bacon, jalapeños, and green onions in the fridge for later. You’ll use them to coat the outside of the cheese ball. Mix everything for about a minute until it’s well combined.

3. The Great Chill

Place two pieces of plastic wrap on your counter so they overlap in a T shape. Put the cheese mixture in the center. Gather the wrap’s sides and shape the mixture into a firm, even ball with your hands. Chill in the fridge for at least 2 hours. This helps the flavors blend and keeps the ball firm.
