Add half a pack of San Manuel chorizo to your saucepan or skillet. With a cooking spoon or spatula, begin to break up into smaller pieces and cook over medium high heat for about 5-8 minutes.
Cut your block of cheese into cubes and add to your cooked chorizo
Add your Rotel and mix to combine. Continue to stir until cheese is completely melted.
Add your queso with chorizo into a serving bowl and enjoy with tostaditas!
