Ingredients
  

  • 1 box red velvet cake mix (15.25 oz)
  • 2 large eggs room temperature
  • ½ cup butter melted
  • 1 cup white chocolate chips

Instructions
 

  • Preheat oven to 350°F. Line your baking sheet with parchment paper and set aside.
  • In your stand mixer bowl, add cake mix, eggs, and melted butter. Mix on medium-high for about 1 minute or until dough forms.

  • Add white chocolate chips and fold with a baking spatula.

  • Cover dough and refrigerate for about 20 minutes or until dough is firm enough to scoop into balls.
  • Roll the dough into small balls (about 1 tablespoon each) or use an ice cream scooper and scoop dough balls and space them out on your cookie sheet.
  • Bake for about 10-12 minutes. Remove them when the edges are set but the centers still appear slightly soft. They will firm up as they cool. Cool on cookie sheet for about 5 minutes before transfering onto a cooling rack to cool completely. Enjoy!
