Dulce de Leche Chocolate Mousse

Ingredients
  

  • 1 Gatsby sea salt extra dark chocolate bar
  • 1 Gatsby dulce de leche chocolate bar
  • 2 large eggs seperate egg yolk & egg white
  • 1/3 cup granulated sugar
  • 1 cup heavy whipping cream divided into 2

Toppings (Optional)

  • grated Gatsby sea salt extra dark chocolate
  • whip cream
  • fresh strawberry

Instructions
 

  • Using a kitchen knife, chop one whole dulce de leche chocolate bar and one whole sea salt extra dark chocolate bar. Reserve a small piece to use for topping if dessired.

  • Separate egg yolk and egg whites of two large eggs.
    2 large eggs
  • In a mixing bowl add egg yolks and sugar. Whisk until well combined. Set aside
    1/3 cup granulated sugar
  • In a medium saucepan, combine half of the heavy whipping cream and chopped chocolate. Stir continously until the chocolate is fully melted.

  • Once the chocolate is fully melted, whisk into the egg yolks and sugar previously mixed. Continue to whisk until fully combined. Set aside the chocolate mixture.
  • Using a stand mixer or hand mixer, beat egg whites until stiff peaks form. Fold the egg white mixture into the chocolate mixture.
  • Using your stand mixer again, add the remaining half cup of heavy whipping cream and beat until stiff peaks form.
  • Immediately fold the whipped cream mixture into the chocolate mixture.
  • Pour into serving glass coups and refrigerate for at least 4 hours.
  • Top with whip cream, grated dark chocolate and garnish with a fresh strawberry. Enjoy!
