Cool Whip Cookies

- 1 box vanilla cake mix
- 1 lg egg
- 8 oz cool whip
- 1 tsp vanilla extract
- 1 cup powdered sugar
- green food dye
Instructions
- Preheat oven to 350 degrees. Line baking sheet with parchment paper.
- In the bowl mix together butter, combine cake mix, egg, cool whip, vanilla extract and green food dye. Mix until well combined. Your cookie dough will be sticky and have a marshmallow creme consistency.
- Use a small cookie scoop, or a tablespoon, and drop ball of cookie dough into bowl of sugar and roll until completely coated.
- Place each dough ball on the cookie sheet about 2 inches apart.
- Bake for 12 minutes or until the cookies are set. The center of the cookie will still be soft with a crispy outer layer.
- Remove from the oven and let cool for 5 minutes. Enjoy!
