Ingredients
  

  • 6 large fresh jalapenos  cut in half lengthwise and deseeded
  • 12 slices bacon thin
  • 8 0z cream cheese soften to room temperature
  • cup raspberry chipotle sauce divided: 2 tbsp for filling, rest for glazing
  • 3-4 tbsp Good Ol’ Boys Candy Bacon Rub

Instructions
 

  • Preheat your oven to 375°F (190°C). Line a rimmed baking sheet with aluminum foil and place a wire baking rack right on top (this elevates the poppers so heat circulates underneath, rendering the bacon fat evenly without making the bottoms soggy).
    6 large fresh jalapenos
  • Slice the jalapeños in half lengthwise through the stem. Scrape out the seeds and inner ribs using a spoon (removing the inner ribbing removes the highest concentration of capsaicin, keeping the heat pleasant rather than overwhelming).
  • In a small bowl, mix the softened cream cheese with 2 tablespoons of raspberry chipotle sauce until completely smooth.

  •  Evenly divide the cream cheese mixture among all 12 jalapeño halves, pressing it neatly into the cavities. Optional: Sprinkle the Good Ol’ Boys Candy Bacon Rub before wrapping.
  • Take one strip of bacon and wrap it securely around each stuffed jalapeño, starting at one end and overlapping slightly as you wind down to cover the cream cheese.

  • Sprinkle the Good Ol’ Boys Candy Bacon Rub heavily over all sides of the bacon-wrapped poppers.
    3-4 tbsp Good Ol’ Boys Candy Bacon Rub
  • Arrange the poppers on your wire rack. Bake for 22–25 minutes until the bacon is browned and cooked through.
  • Remove the pan from the oven and generously brush the remaining raspberry chipotle sauce over the top of each popper. Return to the oven for 3–5 minutes until the sauce bubbles and sets into a glossy glaze.
  • Remove from the oven and let them rest on the rack for 5 minutes (this allows the molten cream cheese to set slightly so it stays intact when bitten). Serve warm!

Notes

The Pro Cooking Tip: Use standard-cut bacon rather than thick-cut. Thick-cut bacon takes much longer to crisp up, which can cause your jalapeños to turn to mush and the cream cheese to melt right out before the bacon is fully cooked.
